Stuffed Mexican Sweet Potatoes

A change up on #TacoTuesday!

I love a good #tacotuesday, but some weeks I need to change it up from tacos. This week I decided to make stuffed Mexican sweet potatoes, and since I had some leftover dried chorizo, I even added a little grated chorizo for some extra flavor!

Below I go over your shopping list and I breakdown the specific recipe and the steps to making this dish! Serves 2.
Ingredients
For the taco meat: ➖1 lb of organic ground turkey ➖1/4 c of grated dried chorizo ➖1 tbsp of cumin, cayenne, paprika, garlic and onion powder ➖Juice from 1 lime ➖1/4 c of water For the sweet potato: ➖2 large sweet potatoes cut in half and baked ➖2 tbsp Greek yogurt, mixed with juice from 1 lime ➖2 jalapeños, sliced ➖1 avocado, sliced ➖1/4 c of cojita or queso Fresco ➖Chopped fresh cilantro
--- Cooking Steps ---
Cut your sweet potatoes in half. Pre-heat the oven to 425 and bake for 45 minutes. I also added mine to the microwave afterwards for 3 minutes to really soften the inside.
Spoon out the inside of the sweet potato and add to a bowl. Set asides.
Add your ground turkey to a pan with lime juice, the seasoning and the chorizo. Cook until the meat is cooked through and then add some water.
Add the meat to the potato mixture and toss together. Add back into your sweet potato boats. Top with the greek yogurt mixed with lime, jalapenos, fresh cilantro and the cojita cheese and then cook for another 2-3 minutes in the oven to warm back up!
