Cauliflower Veggie and Chicken Creamy Peanut Pizza

Pizza nights don't always have to be a "cheat"!

Some nights you just need pizza and even though I had something else planned, I just had to have it. Luckily I had some @traderjoes cauli pizza crust in the freezer so I could keep it somewhat healthy . I decided to make a creamy peanut chicken and veggie pizza, and the best part - it’s dairy and gluten free!

Below I go over your shopping list and I breakdown the specific recipe and the steps to making this dish! Serves 2.
Ingredients
For the pizza:
➖Trader Joe's cauliflower crust
➖1 piece of chicken
➖Creamy peanut sauce
➖1 red bell pepper, sliced
➖1 head of broccoli, chopped
➖1/2 c shredded carrots
➖1 tbsp fresh garlic minced
➖Topped with: 2 scallions chopped, chopped peanuts and chopped fresh cilantro
For the chicken:
➖1 piece of chicken breast
➖1 tsp garlic powder, cayenne, cilantro and pepper/sea salt
For the peanut sauce:
➖1/2 c of @wholefoods peanut sauce
➖1 can of @wholefoods canned coconut milk (I just use the fat from the top)
➖1 tbsp chili garlic sauce
➖1 tbsp fresh garlic minced
--- Cooking Steps ---
Season your chicken. Add olive oil to a cast iron pan and then add your chicken. Sear on both sides for 2-3 minutes and then add to the oven and cook at 400 for 12 minutes.
Cut up the red pepper and broccoli. Add to a pan with 1 tbsp of the peanut sauce, fresh garlic and the shredded carrots. Cook until all the veggies are softened (about 7-8 minutes).
In another pan, add the peanut sauce, coconut milk, chili garlic sauce and fresh garlic on medium. Bring to a boil and then simmer for 3-4 minutes.
Add your crust face down onto a pan (make sure to spray heavily). Cook 10-12 minutes. Flip over and cook another 10 minutes. Add the sauce, then cover with the veggies and chicken. Add back to the oven and broil for 4-5 minutes.
Top with scallions, fresh cilantro and crushed peanuts.
