Chicken Shwarma Bowls FTW!

Last night’s dinner was inspired by laziness and needing to clear the fridge, but this chicken shawarma bowl turned out so bomb.

Sometimes you just need to grab everything in your fridge and throw it together for a healthy dinner bowl. That was what I did for last night's dinner, and it actually turned out post worthy. This chicken is seriously some of my fave OF ALL TIME.

Below I go over your shopping list and I breakdown the specific recipe and the steps to making this dish! Serves 1.


Ingredients

For the chicken:

➖1 piece of organic chicken breast, sliced

➖1 tbsp paprika, cayenne pepper, cinnamon, cumin and coriander

➖1 tbsp fresh garlic minced

➖Zest and juice from 1/2 lemon

➖1/2 red onion sliced

➖1 tbsp olive oil


For the bowl:

➖1/2 c cherry tomatoes sliced

➖1/2 cucumber, cubed

➖1/2 can of chickpeas

➖1 tbsp oregano

➖2 tbsp red wine vinegar

➖1 tbsp fresh garlic minced

➖2 pieces of naan

➖1 c of rice

➖1/2 c of kalamata olives


For the tahini dressing:

➖1/4 c of tahini

➖Juice and zest from 1 lemon

➖1 tbsp fresh garlic

➖1 tbsp water

➖1 tbsp olive oil

➖1 tsp oregano


For the yogurt dill sauce:

➖1/2 c of Greek yogurt plain

➖1 tbsp dill

➖Juice from 1/2 lemon

➖1 tbsp fresh garlic minced


--- Cooking Steps ---

  1. Season your chicken and let it marinade for 1-2 hours. Add oil to a cast iron pan, and let the pan heat up. Once hot, add your chicken and red onion mixture and cook for 3-4 minutes on each side and then put the pan in the oven and cook on 400 for 10-12 minutes.

  2. Chop up your cucumber and tomato, and add to a bowl with the chickpeas, oregano, red wine vinegar and garlic and toss.

  3. Cook your rice.

  4. In another bowl add the ingredients to the yogurt sauce and stir until mixed up. Add all your ingredients for the tahini dressing to a food processor and mix up.

  5. Finally, add your rice to a bowl, and top with the cucumber salad, chicken and onion, olives, naan, yogurt sauce and top with the tahini dressing and some dill.
