Chili Lime Jackfruit Tacos (Vegan + GF)

Tried my hand at jackfruit for the first time and it was a BIG win!


I have been trying to incorporate more plant based meals into my diet and less meat on a weekly basis. Everyday I have been trying to eat one plant based meal, whether it be breakfast, lunch, dinner or even a snack. I have been dying to try jackfruit, as I kept hearing great things from some vegan influencers on Instagram, and it definitely did not disappoint! I kept it easy this time around, since I had never worked with jackfruit before - I bought it pre seasoned and marinated from Whole Foods (Brand: Uptons Naturals)

Below I go over your shopping list and I breakdown the specific recipe and the steps to making these tacos! Serves 2. Recipe is gluten free and vegan.


Ingredients

* 1 box of Uptons Naturals chili and lime jackfruit

* Shredded and massaged kale with lime juice and sea salt

* 1/2 red onion, sliced

* 1 cup corn, seasoned and grilled with paprika

* Not pictured: Avocado and jalapeno slices

* Juice from 1/2 lime

* 4 Siete Foods almond flour tortillas


--- Cooking Steps ---

  1. Heat some olive oil in a cast iron and once hot, add the jackfruit. While it cooks, break up the chunks using a fork (I shredded mine, almost like pulled pork as it was cooking). Add the corn to the pan and sprinkle some paprika and lime juice.

  2. Cook for 8-10 minutes.

  3. Massage and shred about 1 c of kale with lime juice and sea salt. Add the jackfruit to the taco, top with kale and then add some jalapenos and avocado on top.
