Creamy Crispy Heavenly Lemon Chicken

One of my favorite recent recipes! And it's dairy free and gluten free!

Every Monday, I have a girls night and I always try to use those nights to try out new recipes, since my girlfriends love to try all the new stuff I post. The last few weeks we had been craving some Asian cuisine, so I decided to make a recipe I have done before (Crispy Lemon Chicken) - with a slight twist. I added some canned coconut milk for creaminess, and a little chili garlic sauce for spice - and the end result was a winner!

Ingredients
For the chicken:
➖4 small pieces of organic chicken breasts, sliced into small pieces
➖2 c of gluten free Panko crumbs (from Ian’s Naturals)
➖2 c of arrowroot powder
➖2 eggs, mixed up
➖2 tbsp coconut aminos
➖1 tbsp fresh garlic
➖1 tsp crushed red pepper, pepper and sea salt
➖Zest from 1/2 lemon
For the sauce:
➖Juice from 2 lemons
➖Zest from 1 lemon
➖1 tbsp honey
➖1 tbsp chili and garlic sauce
➖Pepper and sea salt
➖1 tbsp canned coconut milk
Served over rice or caulirice.
--- Cooking Steps ---
Start by marinating your chicken strips with the coconut aminos, lemon zest, crushed red pepper, sea salt, pepper and garlic. Marinade for an hour.
Once the chicken is done marinating, fill one bowl with panko, one with arrowroot and one with the egg mixture. Dip each slice of chicken into the arrowroot, then the egg mixture, then the panko crumbs.
Meanwhile, heat a cast iron with olive oil. Once hot, lower the heat to medium, and add each slice of chicken. Cook the chicken for 4-5 minutes on each side until crispy on both sides.
Add all the sauce ingredients into a bowl and mix up. Once the chicken is cooked, remove the chicken and put the heat on low. Add the sauce, and the chicken and coat all the pieces with the sauce. Cook for another 1-3 minutes, then serve over rice.
