A Classic Twist: Lemon Cacio e Pepe

Cacio e pepe is one of my all-time favorite meals - who doesn't love a dinner that consists of literally carbs, cheese and pepper?! This twist is with some lemon, is an all-time classic that is sure to become a staple in your house!


This dish gives off major BDE. It's so insanely simple and will take you no time to make, but it also tastes like a creamy heaven in your mouth. Super kid friendly (honestly tastes like a fancier mac n cheese), but also will impress dinner guests too!

“WHO DOESN'T LOVE A MEAL THAT CONSISTS OF LITERALLY CARBS, CHEESE AND PEPPER?!"

Below I go over your shopping list and I breakdown the specific recipe and the steps to making this stir fry! This meal serves 4.


Ingredients

* 1 package of spaghetti or linguine

* 3/4 c of pasta water (seasoned with sea salt)

* Juice from 1/2 a lemon plus zest

* 3/4 c of Parmesan cheese

* 2 tbsp of extra virgin olive oil

* 1 tbsp of fresh garlic minced

* 2 tbsp of freshly cracked pepper (sometimes i leave some peppercorns in as well - but this isn't for everyone)

* Fresh parsley


--- Cooking Steps ---

  1. Bring a pot of water to a boil and add your pasta - cook to al dente, and season with sea salt. Once done cooking strain the water, but save 3/4 of a cup of the water and set aside.

  2. In a bowl, mix the Parmesan, pepper and lemon zest and set aside.

  3. In a pan, heat up the olive oil and the garlic. After 2-3 minutes, add the pasta water and then add the pasta and turn the burner off. Add in your Parmesan mixture and toss until the pasta is covered with the sauce and cheese mixture.

  4. Juice your lemon and then toss once more, before topping with chopped parsley and more Parmesan and serving!
