Greek Meatball Flatbread Pizza

I LOVE meatballs on pizza - it's always fun to change it up from traditional toppings and this is one of my favorite ways to do it!



I was craving pizza recently, but also was dying for my Mediterranean meatballs. I decided to mix these up and make a flatbread pizza with whole wheat pita, topped with the meatballs, mint pistachio pesto (SO GOOD), tzatziki and feta. The flavor combo turned out so fire - this will definitely be added as a staple in my house!

Below I go over your shopping list and I breakdown the specific recipe and the steps to making this flatbread! Serves 2.


Ingredients

For the Meatballs:

* 1 lb of organic grass fed ground beef

* 1/2 red onion, chopped into tiny pieces

* 3 cloves of garlic, minced

* 1 tbsp fresh parsley, chopped

* 1 tbsp oregano

* 1 tbsp nutritional yeast

* 1 tbsp red wine vinegar

* 1 tsp crushed red pepper

* 1 tbsp lemon zest

* 1 tbsp crumbled feta


For the pesto:

* 1.5 c of fresh mint

* 1.5 c of fresh basil

* Juice from 1 lemon

* 1 c of pistachios

* 2 tbsp nutritional yeast

* Pepper and sea salt


For the flatbread:

* Whole wheat pita

* 3 tbsp tzatziki

* Crumbled feta cheese


--- Cooking Steps ---

  1. Pre-heat the oven to 350 and add your pitas for about 5 minutes until crispy.

  2. Mix the ground beef with all the ingredients and roll into small round meatballs. Heat a pan with some olive oil and cook the meatballs for about 15 minutes - be sure to flip them over throughout to cook all sides.

  3. Add the tzatziki to the pita, then top with the meatballs (sliced up).

  4. In a food processor, add all the ingredients for the pesto and mix. Top the pesto over the meatballs and then add feta on top.
