Using all ingredients from Trader Joe's (something I plan to try and create once a week)


I am a huge Trader Joe's stan and starting this week, I plan to create one dish a week from all TJ's ingredients! They always have the best and most stuff and I love that its a nationwide chain and available for most people following along. This dish was thrown together last minute this morning, when I went shopping and realized I had all the makings for a Mediterranean breakfast dish!

Below I go over your shopping list and I breakdown the specific recipe and the steps to making this skillet dinner! Serves 1. Recipe is gluten free. All ingredients bought from Trader Joe's.


Ingredients

* 1 cup of sweet potato ribbons (pre ribboned from TJ's)

* 1 tbsp olive oil

* 2 organic cage free eggs

* 1 tsp oregano and crushed red pepper

* 1 tsp minced fresh garlic

* 1/4 white onion chopped up

* 1 tbsp Everything But the bagel Greek Yogurt Dip

* 2 tbsp feta, pepper and olive antipasto mixture (packaged)

* 1 tsp fresh parsley chopped


--- Cooking Steps ---

  1. Add the sweet potato ribbons and olive oil to a pan. Add the seasoning, garlic and onion and then cook for about 5-6 minutes.

  2. Crack two eggs into a bowl and mix up with a spoon. Add to the pan, along with the tbsp of Greek yogurt dip, and mix the dip in with the eggs, creating a scramble.

  3. Top the dish with the feta mixture and some fresh parsley.
