Spicy Peanut Sesame Chicken

A spicy twist on a classic dish!


I love a good sesame chicken - it is one of my all-time fave dishes, and I have a great healthy version of traditional sesame chicken, that I will be posting at some point. This week, I was craving sesame chicken with a twist and it turned out fantastic!

Below I go over your shopping list and I breakdown the specific recipe and the steps to making these mouthwatering nachos! Serves 2. Recipe is gluten free!


Ingredients

For the chicken:

* 2 organic chicken breasts, cut into small pieces

* 1 tbsp of arrowroot powder

* 1 tbsp smoked paprika

* 1 tsp pepper and sea salt


For the sauce:

* 2 tbsp coconut aminos

* 1 tbsp rice vinegar

* 1 tbsp sambal oelek

* 1 tsp toasted sesame oil

* 1 tsp honey

* 1 tbsp peanut sauce (I used Whole Food's peanut sauce - you could also just use a scoop of creamy pb, if you don't have peanut sauce on hand)


Topped with:

* 2 stalks of green onion, chopped

* Broccoli/sesame/garlic mixture (2 small grated broccoli heads + sesame seeds + fresh minced garlic, cooked and charred in a pan for a few minutes until crispy)

* 1/2 box of GF brown rice noodles


--- Cooking Steps ---

  1. Cut your chicken into small pieces and cover in the arrowroot, paprika, sea salt and pepper. Put some olive oil in a cast iron pan and let it heat up. Once heated, add the chicken and cook for 6-8 minutes until all the pieces are cooked through and slightly crispy on the outside. Set aside.

  2. In a separate pan, add the coconut aminos and the rest of the ingredients for the sauce. Bring to a slight boil to thicken and then move to simmer. Make sure to stir with a spoon.

  3. In a pot, bring water to a boil and add your brown rice noodles. Cook for 4-5 minutes.

  4. Add your chicken and noodles to the pan with the sauce and coat everything with the sauce. Dish out in a bowl and add the green onion and the broccoli/sesame mixture to the top and serve.
