The Best Vegan & GF Quinoa Taco Nachos

Some #TacoTuesdays, I CRAVE nachos, but I am constantly trying to start the week healthy and feel that guilt. Introducing the best vegan/GF nachos that will leave you feeling guilt free!


Not even trying to toot my own horn when I say these nachos belong in a restaurant. I honestly couldn't have even told you if I didn't make these that they were vegan AND gluten free - they were that yummy! Id on't know about ya'll, but we stan a guilt free cheat meal in this household. Very easy to make with cheese and meat as well - substitute the quinoa with ground beef or turkey or use regular queso/cojita cheese in place of the cashew queso and vegan cheese!

Below I go over your shopping list and I breakdown the specific recipe and the steps to making these mouthwatering nachos! Serves 1-2.


Ingredients

For the quinoa taco meat:

* 1 c of quinoa

* 2 c of water

* Juice from 1/2 lime

* 1 tbsp cayenne pepper, cumin, paprika, garlic powder, onion powder


For the nachos:

* Siete Foods GF Torilla chips with lime juice

* 1 c of Quinoa taco mixture

* 1/2 c Siete Foods cashew queso

* 1/2 c of Rotel Diced Tomatoes

* 1-2 jalapenos, sliced

* 1 avocado, sliced

* 2 tbsp vegan queso fresco cheese (1/2 c of raw slivered almonds, soaked in hot water for 1 hour, 1 tbsp lemon juice, 2 tsp nutritional yeast, 1/4 c of water, mixed in a food processor)

* Handful of shredded lettuce

* Handful of fresh cilantro, chopped


--- Cooking Steps ---

  1. Cook the quinoa in a pot - 2 c of water and 1 c of quinoa - bring to a boil and then simmer until the water soaks up.

  2. Once the quinoa is cooked, add to a pan with olive oil and lime juice. Season and squeeze more lime juice on top and cook for several minutes on high until it starts to crisp, but not too dry.

  3. Add the chips to a plate, top with quinoa. Add the cashew queso and then heat up for 1 min in microwave.

  4. Add Rotel, lettuce, then top with avocado, jalapenos, cilantro and the vegan queso fresco and serve!
