The Lightest Dreamiest Salad of all time

This summer salad is a delight to the taste buds!


I needed a light salad to bring to a girl's night this week, and found some inspo from several recipes with zucchini and ricotta. I added some lemon, mint and pistachios, and it created the lightest, best salad. This is a must for summer dinner parties!

Below I go over your shopping list and I breakdown the specific recipe and the steps to making these mouthwatering nachos! Serves 3. Recipe is gluten free!


Ingredients

* 3 zucchinis, de-seeded down the center and then sliced in half

* Juice and zest from 2 lemon

* Drizzle of olive oik

* 1/2 c chopped pistachios

* Handful of fresh mint, chopped

* 4 tbsp of ricotta, seasoned with basil and oregano


--- Cooking Steps ---

  1. De-seed the zucchinis down the middle and then slice into halves. mix the zucchinis, zest and lemon juice together in a bowl. Add olive oil and mix together.

  2. Add pistachios, mint and dollops of ricotta and serve!
