My Favorite Peanut Stir Fry

This dish is something i threw together one day when I was in need of a lunch, and to this day remains one of my favorite lunches to prep for the week!

A few months back I was craving something hearty for lunch and had nothing planned. Luckily I had a bunch of veggies, some brown rice noodles and some peanut sauce I had randomly picked up at Whole Foods. I was able to put together this stir fry and boy DID. IT. DELIVER. If you like spice and peanut flavors, this meal will not disappoint!

Ingredients
* 1/2 package of brown rice noodles (GF)
* 1 piece of chicken breast (seasoned and cooked in a cast iron with: brown sugar, thyme, fresh garlic, coconut aminos, lime, onion powder), shredded
* Handful of broccoli
* 3 large carrots chopped up
* 1 can of chickpeas
* Optional* 1 red pepper chopped and handful of spinach
* 4 tbsp Whole Foods peanut sauce (I prefer this brand, it is somewhat healthy and the ingredients are good)
* 1 tbsp sambal oelek
* 1 tbsp fresh garlic, minced
* 2 green onions, chopped
--- Cooking Steps ---
Bring a pot of water to a boil and add your brown rice noodles - cook for 3-4 minutes until they are cooked through, then rinse and drain.
In a cast iron pan, cook your seasoned chicken in olive oil - I like to crispy the outsides for several minutes, then put the pan in the oven at 400 and cook for another 6-10 minutes. Shred chicken once cooled.
In a separate pan, add all the veggies, drained chickpeas and garlic to a pain a tiny bit of olive oil. Cook for several minutes until all the veggies are softened. Once softened, add the peanut sauce, the noodles and the sambal and mix everything until all the food is covered with the sauce.
Add the chicken in, toss and then serve!
