Vegetable Turmeric Detox Soup

Some Monday's you just wake up and know that your weekend of eating and drinking like crap have caught up to you. For those Monday's this detox soup is the PERFECT thing to get you and your gut back on track! It's also easy to make and tastes delicious.

Below I go over your shopping list and I breakdown the specific recipe and the steps to making these mouthwatering nachos! Serves 3. Pro Tip - if you are lazy like me, Trader Joe's always has chopped up soup containers with onion/celery/carrots! Also, to make vegan, use vegetable broth instead of chicken bone broth.


Ingredients

* 1 container of chicken bone broth (I used Kettle & Fire)

* 1 c of water

* 1 sweet potato, chopped

* 1 white onion, chopped

* 1 tbsp turmeric and cayenne pepper, sea salt and pepper

* 1 tbsp fresh ginger, grated

* Juice from 1/2 lime

* 1 head of broccoli, chopped

* 2 large carrots, chopped

* 4 stalks of celery, chopped

* 1 avocado, sliced

* 2 jalapenos, sliced

* 1 tbsp fresh minced garlic

* Fresh cilantro


--- Cooking Steps ---

  1. Chop up all your veggies and saute them in a pot with olive oil for 5-6 minutes.

  2. Add the chicken broth and lime juice, along with the grated ginger and minced garlic.

  3. Bring to a boil, and then cover and simmer for 8-10 minutes.

  4. Top with avocado and cilantro.
