Walnut "Chorizo" Tacos - the best!

Last night’s dinner was inspired by being bored by ground beef and needing a no meat night!

Walnut “Chorizo” tacos ftw! I have been looking for ways to eat tacos without meat and I saw this idea on Pinterest and decided to try it out. The consistency turned out great and so did the taste - I would 10/10 eat these every week! Super easy and quick to make for the busy mom’s or working ladies too! Can be made vegan, by just omitting the cheese on top. Also GF!

Below I go over your shopping list and I breakdown the specific recipe and the steps to making this dish! Serves 1 (3 tacos).


Ingredients

For the walnut chorizo: ➖1 c of walnuts ➖1 tbsp cayenne pepper, paprika, onion powder, garlic powder ➖Juice from 1 lime ➖2 tbsp water ➖1.5 tbsp tomato paste For the taco: ➖@sietefoods almond flour tortillas ➖1/2 avocado ➖1/4 red onion, sliced (marinated in lime and white vinegar) ➖2 jalapeños, sliced (marinated in lime and white vinegar) ➖Fresh cilantro ➖Crumbled goat cheese (use grated cojita if you do not like goat)

--- Cooking Steps ---

  1. Blend all the ingredients for the "chorizo" in a food processor. Add more water if it needs to blend better. Set aside.

  2. Cut up the red onion and jalapenos and cover with lime juice and vinegar - let this sit for an hour.

  3. Add your "chorizo" to a pan with a little oil and cook for several minutes, until slightly crispy. Chop it all up with your spatula until it resembles crumbed chorizo.

  4. Cook your Siete Food tortillas in the oven to get them crispy.

  5. Add your walnut "chorizo" to the taco shell, and cover with the red onion, jalapenos, fresh cilantro, avocado slices and crumbled goat cheese.
